  1. 1 cup raw rice
  2. 3-4 tbsp oil
  3. 3 carrot
  4. 100 g beans
  5. 1/4 cup cauliflower
  6. 1/4 cup green peas
  7. 2 tbsp green capsicum chopped
  8. 2 tomato chopped
  9. 2 onion chopped
  10. 2 green chilli chopped
  11. as needed Little ginger grated
  12. 2 tbsp garlic paste
  13. 1 tbsp Kaju/cashew
  14. 1/4 cup curd
  15. As required water
  16. 4 tbsp saffron milk
  17. Spice
  18. 1/2 tsp jeera
  19. 2 clove
  20. 2 small cinnamon
  21. 2 bay leaf
  22. 1/2 tsp whole pepper
  23. 2 green cardamon
  24. 1 star rinse
  25. 1/2 tsp turmeric powder
  26. 1 tbsp chilli powder
  27. 1 tsp coriander cumin powder
  28. 1 tsp garam masala
  29. 1 tbsp biryani masala
  30. 1 tbsp chopped kothmir
  31. To serve with
  32. as required Onion raita

Instructions to make to make Vegetable biryani

  1. Soak the rice for 1 hour. Wash it, add salt, little ghee, bay leaf and pressure cook till it cooked 90%. Spread it and allow to cool. Chop all vegetable. Pressure cook for 2 whistle. Don't overcook.
  2. Heat oil/ghee in kadai. Add spice - clove, cinnamon, bay leaf, cardamom, jeera, pepper, star rinse. Add ginger- garlic paste. Saute for 2 min. Add green chilli, capsicum, onion. Saute for 2-3 min. Add chopped tomato and salt. Add cashew nuts, Add turmeric powder, red chilli powder, coriander cumin powder, garam masala, and Biryani masala. Cook till oil separates.
  3. Add curd now. Cook till it mix well. Add vegetable. Cook for 5 mins. Now do the layering of Biryani. Take a handi, grease with ghee/ oil. Now spread the rice. On top layer add prepared masala.
  4. 2nd layer of rice, spread it. On top add saffron milk. Add prepared masala, and layer it with rice. And again masala.add chopped coriander leaves. Cover it with plate. Switch on flame. Keep it low flame. And place it on top of tawa. Give dum to biryani for 5 mins. Switch off. Either serve it with layer or mix the masala completely. Here I have completely mixed the rice with masala.
  5. Vegetable Biryani is ready to serve.
