  2. 1 cup Yogurt

  4. 1 tsp Turmeric

  18. 1/2 inch Cinnamon stick
  19. 8-9 Cloves
  20. 2 Star anise
  21. 1 Nutmeg
  22. 1/4 tsp Mace
  23. 2 cups Guard Basmati rice
  24. 1/2 inch Cinnamon stick
  25. 2 Star anise
  26. 1 Bay leaf
  27. 1 tbsp Oil
  28. Salt to taste
  29. Green coriander as required
  30. Mint leaves as required
  31. Lemon slices as required
  32. Onion fried as required
  33. Green chilies as required

Steps to make to make Matka Biryani

  1. In a bowl add chicken, yogurt, salt, turmeric, red chili powder, garam masala powder, green chilies and oil. Mix all these ingredients well and marinate chicken for 15 to 20 minutes.
  2. Heat oil in a pan, add onion and cook until translucent. Add ginger garlic paste, whole spices, bay leaf and mix well.
  3. Add tomato puree, chili flakes, cumin powder, coriander powder and cook for 3 to 4 minutes. Add marinated chicken in it and cook for 8 to 10 minutes. Until chicken in 80% cooked.
  4. Soak Guard Basmati rice for 25 minutes. Set aside.
  5. Simmer water in a pan, add salt, oil, cinnamon stick, star anise, cloves and bay leaf. Lastly add soaked rice and boil them until 80% cooked. Set aside.
  6. Take a clay pot (matka) spread chicken gravy layer in bottom; cover it with a layer of rice. Repeat the same layering process; lastly top it with lemon slices, green chilies, coriander, mint leaves and fried onion.
  7. Drizzle yellow food color (dissolved in water) on top, cover clay pot with foil paper.
  8. Heat up the coals and cook biryani on it for about 10 minutes.
  9. Your delicious matka biryani is ready to serve.
